I’m sort of obsessed with these. They’re not sweet. They’re a bit chocolately. They’re vaguely savory, except that they’re a brownie.
One cup of quick or thin cut oats (Quaker, unprocessed, the regular kind)
One cup of roasted almonds (whole)
Puree both in the food processor until you get a pretty fine flour.
Meanwhile, soak four dates in 1/3 cup very hot water.
Add to the flour mixture: 1/3 cup cocoa powder. Process again.
Dump out the flour into a bowl, put the dates and water into the food processor, add 1/3 cup maple syrup, process until dissolved. If you have some, add a teaspoon of cocoa butter and maybe a tablespoon of cocoa nibs.
Add a pinch of salt and two pinches of baking soda and half a teaspoon vanilla extract. Process again.
Now, add back the flour mixture and process one last time. You can run it for a minute, nothing bad will happen.
Use your hands to form the brownies into a recognizable mass on a cookie sheet (I use parchment paper), perhaps half inch thick.
Bake at 320 degrees for ten minutes until slightly firm and pretty delicious.
